I was recently invited to be part of a food trail organised by Phoenix Marketcity & Carpe Diem for food bloggers. Called the ‘Phoenix Marketcity Food Trails 1.0’, a blogger would randomly be given a restaurant and an ingredient and then order a dish that heroes that ingredient.

I was quite happy to have gotten Indigo Deli as my restaurant and Chicken as my ingredient.

After some suggestions from the server, I ordered for one of their specials, the Deli Roast Chicken that comes on a bed of mashed potatoes and a gravy. The dish was an absolute behemoth and a carnivore’s dream. It had chicken cooked on the crown and with the legs and thighs. Don’t you love when the chicken skin is absolutely crispy and the chicken itself cooked so perfectly that your knife just slides into it. That is exactly what happened when I had this dish.

The mashed potatoes were silken smooth and the slow roasted onions had that tinge of sweet flavour which was absolutely blissful. The accompanying gravy which was more like a reduced chicken stock or a stew had a lovely meaty flavour extracted from the chicken bones. It’s really beautiful to see the way the chicken is respected while cooking it and using each and every part of it to extract flavours from it and make it stand out on the menu.

I could barely move after this hearty meal. A big shout out to Carpe Diem, Phoenix Marketcity and all associated restaurants for this one of a kind initiative for us food bloggers.
